Yogurt, Not Just for Breakfast Anymore

Yogurt is a great source of protein and calcium and comes in a variety of styles and flavors. But it is not just for breakfast!  This month’s blog brings us a yogurt dessert parfait, an after-school smoothie, a spinach artichoke dip, and a healthful and versatile Greek dressing.

Easy Tzatziki Dip
This dip doubles as a sauce that pairs well with meats - chicken, beef, pork, lamb or white fish. Or, use it as a fresh alternative to ranch dip for vegetables or pita bread. Tzatziki makes a great salad dressing, or spread it on a sandwich instead of mayonnaise. You’ll find so many uses, you’ll need to make another batch soon! Ingredients
  • 1 cup Byrne Hollow Farm Greek yogurt plain
  • 1 English Cucumber seeded, finely grated and drained
  • 2 cloves garlic finely minced
  • 1 teaspoon lemon zest plus
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped fresh dill
  • Kosher salt and freshly cracked black pepper

  • 1 cup Byrne Hollow Farm Greek yogurt plain
  • 1 English Cucumber seeded, finely grated and drained
  • 2 cloves garlic finely minced
  • 1 teaspoon lemon zest plus
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped fresh dill
  • Kosher salt and freshly cracked black pepper
Instructions
  1. In a medium bowl, whisk together the yogurt, cucumber, garlic, lemon zest, lemon juice and dill.
  2. Season with salt and pepper. Chill.

Spinach Artichoke Dip
Using yogurt instead of sour cream lightens this favorite recipe and adds a tangy flavor. Recipe adapted from Delish.com.

Ingredients
  • 1 14-oz. can quartered artichoke hearts drained
  • 1 5-oz. package Olivia's Baby Spinach chopped
  • 1 cup Byrne Hollow Farms Greek yogurt
  • 1 cup Supreme Shredded mozzarella cheese plus more for topping dip
  • 1/3 cup shredded Parmesan cheese
  • 2 cloves garlic minced
  • kosher salt

Instructions
  1. Preheat the oven to 350°F.
  2. Chop artichoke hearts and spinach into bite-sized pieces.
  3. Mix all ingredients together and season with a pinch of salt;
  4. Pour into a small casserole or oven-safe dish (about 1-quart).
  5. Sprinkle the top with extra mozzarella cheese.
  6. Bake for 20-22 minutes, or until heated through and the cheese on top is melted.
  7. Serve warm with pita or tortilla chips.

Yogurt, Berry and Granola Dessert Parfait
The crunchy flavors of our Sacred Cow Granola layered with sweet berries and vanilla yogurt make the perfect dessert parfait. (You won’t miss the chocolate, trust us!) Our granola brings so many flavors to this dish: the sweetness of organic maple syrup and toasted coconut, the tang of dried cranberries and crystallized ginger, and the nutty flavors of walnuts, pecans, almonds, pepita, and sesame seeds make this a real treat! Ingredients listed are per serving.

  • 1 8oz Narragansett Creamery yogurt vanilla or strawberry
  • 1/2 cup fresh berries sliced

  • 1/2 cup Sacred Cow Granola
  • 1 8oz Narragansett Creamery yogurt vanilla or strawberry
  • 1/2 cup fresh berries sliced
Instructions
  1. Slice berries and layer into a glass.
  2. Top with half of yogurt.
  3. Crunch large pieces of granola, and layer over yogurt.
  4. Top with remaining yogurt, a few berries for color and serve!

  • 1/2 Cup Mixed Berries, Frozen Wyman's of Maine
  • 2/3 Cup Orange Juice Munroe Dairy or Natalie's

Ingredients
  • 1/2 Cup Plain Greek Yogurt Byrne Hollow Farm
  • 1/2 Cup Mixed Berries, Frozen Wyman's of Maine
  • 2/3 Cup Orange Juice Munroe Dairy or Natalie's
Instructions
  1. Add all ingredients to blender and blend until smooth. Pour into a glass and enjoy!
Recipe Notes

Alternate Idea: Create a tasty parfait by swapping out the juice and layer the yogurt and berries with Sacred Cow Granola.
