Southwest Chicken Sausage Rice Bowl

  • 1 12 oz package al fresco Roasted Garlic Chicken Sausagecut into ½ inch slices
  • 2cups brown riceuncooked
  • 15oz can cooked black beansdrained and rinsed
  • 1 large tomatodiced
  • 1 medium yellow oniondiced
  • 1 medium red bell pepperchopped
  • 1 medium yellow bell pepperchopped
  • 1-2cups fresh cilantro leavesloosely packed
  • 1Tbsp olive oil
  • 2cloves fresh garlicminced
  • 1tsp Ground cumin
  • Juice of one lemon
  • salt & pepper to taste
  • Hot red pepper flakesoptional
  1. Prepare rice according to package directions. Fold in beans.
  2. Heat oil in a large skillet over medium heat. Saute onions, garlic and bell peppers for 5 minutes.
  3. Add sausage, tomato, cumin and salt and pepper, to taste. Cook 3 minutes, stirring occasionally.
  4. Combine sausage mixture, rice and beans, and lemon juice. Top with cilantro.
