When the weather turns cold, and you need quick meal ideas, turning to eggs is always a winner! Omelettes are a great way to offer protein with the option of ﬁllings to offer variety of ﬂavors and nutrients. Start with the main ingredients as a base, and choose your ﬁllings below!
Prepare ﬁllings in advance, as eggs will cook quickly. See ﬁlling ideas below, using 1/3-1/2 cups of ﬁlling per 2-egg omelette. Once your ﬁllings are prepared, begin preparing egg mixture.
Heat butter in 6- to 8-inch nonstick omelette pan or skillet over medium-high heat. Tilt pan to coat bottom. Once melted, pour in egg mixture. Mixture should set immediately at edges.
Gently push cooked portions from edges toward the center with a spatula so that the uncooked eggs can reach the hot pan surface. Continue cooking, tilting pan and gently moving cooked portions as needed.
When top surface of eggs is thickened and no visible egg liquid remains, place ﬁlling on one side of the omelette. Fold omelet in half with the spatula. Slide omelette onto plate and serve immediately.
OMELETTE BAR FILLING IDEAS
